Cooking with Anchovies in Serrano's ABCs
We are delighted to have been able to collaborate to cook with anchovies in the #GASTRODAYS of the ABC de Serrano Shopping Center, a gastronomy space where these magnificent workshops are given totally free of charge.
On this occasion we were fortunate to have the collaboration of chef José David Fernández who prepared the following recipes:
Smoked cod with Basque style peppers on a puff pastry base.
Mojama spread with garlic oil and caramelized cashew powder with five spices.
Smoked sardine with sweet wine reduction on a layer of grilled zucchini on loaf bread.
Smoked tuna rolls with Sakura salad, mustard and honey vinaigrette with grated tomato base accompanied by peeled cherry tomatoes.
