Initio red wine
Characteristics of Initio Vinification: The grapes, selected by parcels, enter tanks and undergo a pre-fermentative cold maceration for one week. Subsequently, fermentation begins naturally, with the yeasts of the grapes themselves, without corrections or additives, for three weeks. Once the malolactic fermentation is completed, the wine is aged for 14 months in French oak barrels and foudres. It is bottled without filtering or fining. Initio wine tasting notes: A clean and bright Initio 2010. Deep cherry red color with garnet rim. The nose presents the varietal Grenache with a lot of complexity. Aromas of blackberry preserves, plums, orange blossom, licorice, cocoa, with a variety of wild aromatic plants and a mineral background. In the mouth it is lively, elegant, ample and structured, with a long and deep persistence that makes it very personal. Perfect with all types of meats, stews, casseroles, Iberian cured meats, cheeses, red tuna, rice and pasta. Las Moradas is located at an altitude of almost 900 m, on the threshold of the Sierra de Gredos, in a unique spot in San Martín de Valdeiglesias, southwest of Madrid. Around it, 21 hectares of old Garnacha vineyards on a fine gravel soil of granitic origin, with low grape yields and an austere climate. The vineyards are in the mountains, with a special landscape value protected by its richness of fauna and flora, and we support environmental sustainability with organic agriculture. The wine obtained tries to capture the essence of Grenache in these terroirs in the most natural and respectful way possible.
