Lazana Cheese Blinis with Cantabrian Anchovies

Ingredients
- Refined Lazana Cheese
- Cantabrian anchovies
- 100 grs. of white wheat flour
- Half a spoonful of ground white pepper
- A pinch of salt
- 15 grs. of fresh yeast
- 200 ml. of milk
- One egg
- A dash of mild olive oil
Preparation

For the blinis:
In a bowl, place the flour (preferably sifted), pepper and salt.
Heat the milk until lukewarm and dissolve half of the yeast. Add the other half to the bowl. Once the first half is dissolved, add it to the rest of the ingredients in the bowl. Finally add the egg yolk and stir everything with a whisk.
Once the dough is ready, cover it with cling film (touching the dough) and let it ferment for one hour. Once fermented, whip the egg whites until stiff, incorporate and stir with enveloping movements without giving air to the dough.
Finishing and Presentation
On a griddle, with a little hot oil, pour half a ladleful. When it sets on one side, turn it over to brown and add the Lazana cheese to temper.
Finally we crown it with two anchovies.
