Ingredients
- 500 g fresh cockles
- Extra virgin olive oil
- 60 ml of white wine
- Juice of ½ lemon
- 1 clove garlic
- Parsley
Preparation
- We introduce in a container cold water and ice, and two spoonfuls of coarse salt. Add the cockles and leave them for 30 minutes. Change the water and add ice and salt again and another 30 minutes.
- In total one hour of soaking. The water must be clean, if it is still cloudy it means that they had a lot of sand and you have to do 'the soaking process' a third time. Generally one hour is enough but not always. Check if there is one with a broken or open shell and remove it. Rinse under the tap several times.
- Add the wine in a saucepan, when it starts to boil add the cockles, the garlic clove, the juice of half a lemon and the parsley. Add the garlic clove, the juice of half a lemon and the parsley, cover the pot and let it cook for 6 or 7 minutes over high heat, stirring from time to time.
- Serve with lemon.
