Origin and process

(Español) La elaboración de los boquerones de Casa Santoña, se realiza por métodos completamente artesanales. El boquerón pasa por una congelación de mas de 48 horas para eliminar la posibilidad de anisakis. Un tratamiento en vinagre de mas de 24 horas y finalmente se procede a su envasado en aceite de oliva para su consumo directo.
