Genoese Pesto of Olasagasti Preserves

Genoese Pesto is a typical Ligurian sauce that is often eaten in every household in that part of Italy. It is prepared with basil, olive oil, pine nuts and pecorino cheese. It is one of the best sauces that exist for spaghetti or other pasta, for a tomato and mozzarella salad or a vegetable stew.

To prepare this pesto of Conservas Olasagasti, the secret is to mix it with boiling water to heat it and dilute it (one tablespoon of water for 2 pesto, approximately). Never heat it directly in the microwave or in the fire. And then add olive oil so that the sauce is more tasty, more coarse and not so concentrated.
