Initio 2011 Red Wine
A mild, rainy winter followed by a spring with frequent precipitations. Thus began the 2010, a year characterized in its first half by moderate temperatures. Until the end of July the heat of a summer that was especially dry was not noticed. In these conditions we bet on delaying the harvest. A decision that the passage of time proved successful. The rain arrived in mid-September allowing our grapes to complete maturation and offer a harvest of tremendous quality. Manual harvesting in boxes and later table selection.

Vinification: The grapes, selected by plots, enter deposits and perform a pre-fermentative maceration in cold for one week. Subsequently, it starts the fermentation, naturally, with the yeast of the grape itself, without corrections or additives, for three weeks. Once the malolactic fermentation is carried out, it is aged for 14 months in French oak barrels and fudres. It is bottled without filtering or clarifying.
Date of bottling: June 2013. Operating temperature: 15-17 ºC.
