Lazana Cheese Blinis with Cantabrian Anchovies
What ingredients I need?
- - Lazana Afinado cheese
- - Cantabrian anchovies
- - 100 g white flour
- - Half a spoonful of ground black pepper
- - A pinch of salt
- - 15 g of fresh yeast
- - 200 ml of milk
- - One egg
- - A splash of olive oil

For the blinis:
Put the flour (preferably sifted) in a bowl with pepper and salt.
Heat the milk until lukewarm and dissolve half of the yeast in the milk. Put the other half in the bowl. Once the first half has dissolved, add it to the other ingredients in the bowl.
Finally, add the egg yolk and stir everything together.
When the dough is ready, cover the bowl with plastic wrap (touching the dough) and let it sit for an hour. Once the mixture has risen, we beat the egg white until stiff and add it to the mix.
Pour half a ladle of the dough onto the griddle coated with a little hot oil. When it has thickened on one side, turn it over so that it browns and add the Lazana cheese, melting it slightly.
Finally top it with two anchovies.
