How do I prepare?
Today’s recipe is for gamblers! The Avocado “mus” with smoked tuna Casa Santoña.
¿Why Gamblers? Because this delicious starter is very similar to the spanish cards game “mus”.
When you try it, you notice the 4 steps of flavor as the “mus” has 4 “plays”.
The first phase is the creamy avocado with a spicy touch of English mustard that passes smoothly to the second stage, where the smoked and “sea” taste of the tuna are made present until the third stage assails with a flavor of roasted sesame That floods your mouth to end the inevitable freshness of coriander, the game.
Let the game begin!
Take a ripe avocado, peel it and pass it through the minipimer or hand mixer with a teaspoon of English mustard (to taste), salt, pepper, oil and lemon squirt. The cream is ready.
Put a frying pan over low heat and toast the sesame seeds. If you do not know, simply put in the pan the seeds and the wig with the pan, watching that they do not burn. No need for oil or skim or anything to stir, if you burned it, throw it away and start again. Let’s be professional!
The assembly: carefully take a slice of smoked tuna Casa Santoña, make the cone where you go to serve and, with a pastry bag like the one that teaches you the other day, fill the inside of the tuna with the cream of avocado. Above, a few roasted sesame seeds and one or two leaves of coriander in the avocado cream.
In this recipe yo can see how to make a pastry bag
So, you know how to prepare a gambler’s appetizer, and make a bunch of them, big time, because like we say in the “mus”, little gambler, loser of “mus”.
