Cantabrian Anchovies

At Casa Santoña we start with a selection of Cantabrian anchovies (Engraulis encrasicolus) in order to bring you the highest quality final product. We leave the anchovies for a long ripening period in temperature-controlled facilities on the coast of Cantabria. They are cleaned and deboned completely by hand, resulting in a product pleasing to the most demanding palates. Upon completion of the deboning process, we separate the anchovies according to their size: 00, 0, EC o AC.
