Casa Santoña anchovies and Lazana cheese
The newspaper Expansión has published a special gourmet report extolling the virtues of the marriage between cheese and anchovy.
On this occasion, Casa Santoña House is fortunate to be paired with the award-winning Queso Lazana (World Cheese Award 2014-2015), a cow cheese with a soft interior, whose rind gives off a characteristic fresh smell with subtle hints of fermented vegetables and mushrooms.
Master cheese maker Felipe Serrano says in this article:
“Visually the anchovies are perfect, wide and shiny, almost salmon-brown. The pairing with the cheese produces intense, frank aromas with hints of iodine, merging into an intense, long flavour, faintly saline at the end.”
