Cooking anchovies in ABC de Serrano
We are delighted to have been able to collaborate in the #GASTRODAYS del Centro Comercial ABC de Serrano, hosted by the ABC Serrano shopping centre, a gourmet establishment where these magnificent free workshops are taught.
This time we were fortunate enough to have the collaboration of chef José David Fernández, who created the following recipes:
- Smoked cod with Basque-style peppers in a pastry base.
- Mojama drizzled with garlic oil and sprinkled with caramelised cashew dust and five spices.
- Smoked sardines with a sweet wine reduction on a layer of courgette and bread, lightly browned on the griddle.
- Smoked tuna rolls and sakura salad with honey mustard vinaigrette, grated tomato base, and peeled cherry tomatoes..
